How We Choose Each Monthly Chocolate Box
A monthly chocolate box should feel varied without feeling random. For our ongoing 9, 12 and 16-chocolate subscriptions, each selection is chosen by Mona, our Head Chocolatier, using previous records, flavour balance, seasonal opportunities and member preferences.
There is no fixed formula. The aim is to make each month feel different enough to look forward to, while keeping production practical and ensuring the final selection works as a whole.
One wider selection for all three sizes
The 9, 12 and 16-chocolate subscriptions are drawn from the same wider monthly selection. Mona does not create three separate menus. She chooses a broader group of flavours, and each box size is filled from that assortment.
This works because all our chocolates are made in small batches. Planning one monthly selection keeps production straightforward instead of asking the team to make several different groups of chocolates at the same time.
Someone receiving nine chocolates and someone receiving 16 are therefore both experiencing that month’s Chocolate Club selection, simply in different quantities.
Keeping track of previous boxes
We keep a running record of every previous month’s selection. Before choosing the next box, Mona looks at what members received most recently and tries to make as many flavours different as possible.
Complete non-repetition is not always realistic. Our standard range contains 25 flavours, so a 16-chocolate box cannot contain an entirely new set every month indefinitely.
The previous month is the most important reference point. The aim is to avoid sending a box that feels too similar to the last one, while still leaving room for familiar favourites.

Balancing chocolate types and flavours
Variety is not only about changing individual chocolates. Mona also considers the balance of the complete box.
Not everyone enjoys dark chocolate, so we would not normally send a 12-chocolate box containing ten dark chocolates and only two milk chocolates. We also avoid allowing one flavour style to dominate the selection.
There is no strict ratio, but Mona aims for a good balance of chocolate types and flavours. The box should offer enough contrast to make choosing the next chocolate part of the enjoyment.
Making room for limited editions
Limited-edition flavours help bring something different to the monthly selection.
When a seasonal collection is available, such as our Summer Favourites, Chocolate Club members will usually receive all of those flavours. They sit alongside chocolates from the core range, giving regular subscribers the chance to try something that is not available throughout the year.
Remembering member preferences
Members can contact us with favourites or exclusions. A member might ask for more of a particular flavour or request that a certain chocolate is left out.
We add that information as a note to their subscription. The system automatically applies it to every future order, so the packing team can see it when the next order is printed. Members do not need to repeat the same request each month.
A favourite may therefore appear more often when someone has specifically requested it. In that case, repetition is not something to avoid; it is part of making the box more enjoyable for that member.
Why the prepaid 25 works differently
The prepaid 25-chocolate subscription follows a planned three-box sequence rather than being selected afresh each month.
The first box contains one of each of our 25 standard flavours. The second contains roughly half of those flavours, with duplicates so members receive two of some chocolates and three of one. The third features the other half of the range, again with duplicates.

The three boxes are designed to work together: the first introduces the full standard range, while the next two return to those flavours in larger quantities across two complementary selections.
This monthly curation process therefore applies only to the ongoing 9, 12 and 16-chocolate subscriptions. The prepaid 25 follows its fixed three-box plan.
Curated, but never overcomplicated
Choosing each monthly box is not a scientific process, and it does not need to be. The running record provides a starting point, while balance, limited editions and individual preferences shape the final selection.
The aim is simple: each box should feel familiar enough to contain chocolates members enjoy, but different enough to make opening it something to look forward to. Our monthly chocolate subscriptions are available with 9, 12 or 16 chocolates in each delivery.
