Types of Chocolate: A Delicious Guide
There’s something magical about chocolate. Whether you’re unwrapping a bar after a long day or sharing truffles with a friend, chocolate brings joy like no other treat. But did you know that not all chocolate is created equal?
From the classic sweetness of milk chocolate to the bold bite of dark chocolate, and even the buttery bliss of blonde, each type has its own personality, flavour profile, and fan base. Let’s unwrap the world of chocolate and discover what makes each type unique.
Milk Chocolate: The Beloved Classic
Milk chocolate is probably what comes to mind when you think of a standard chocolate bar. It’s creamy, sweet, and comforting, like a warm hug in edible form.
To be classified as milk chocolate in the UK and EU, it must contain a minimum of 25% cocoa solids. It also includes milk powder or condensed milk, which gives it that smooth, melt-in-the-mouth texture we all know and love.
Originally developed in the 1800s, milk chocolate transformed what was once a bitter concoction into a household favourite. It’s the foundation of many chocolate bars, truffles, and nostalgic childhood memories.
Dark Chocolate: Bold, Rich, and Pure
If milk chocolate is the warm hug, dark chocolate is the confident handshake. Rich, intense, and often a little bit mysterious, dark chocolate contains anywhere from 50% to 100% cocoa solids. That means less sugar and no milk, just a powerful cocoa experience.
Dark chocolate isn’t just for purists. It’s also packed with antioxidants and naturally occurring compounds like flavonoids and polyphenols, which have been linked to health benefits like heart support, increase in stem cell production, and reduced inflammation. It’s often vegan-friendly and dairy-free, making it a popular choice for those with dietary preferences or restrictions.
A 60% cocoa dark chocolate strikes a beautiful balance between bitter and sweet. But if you’re feeling brave, you can go even darker, just be ready for a more robust experience.
White Chocolate: Sweet, Creamy, and Controversial
Ah, white chocolate, the wildcard of the chocolate world. Technically, it doesn’t contain cocoa solids, which has sparked debates about whether it’s “real” chocolate. But it does contain at least 20% cocoa butter (in the UK and EU), which still makes it part of the chocolate family.
White chocolate is smooth and creamy with a sweet, mellow flavour. Its signature ivory colour comes from the cocoa butter itself, although ultra-white varieties may contain added colouring in some countries.
If you love the buttery side of chocolate, white chocolate is your go-to. It pairs beautifully with ingredients like raspberries, coconut, and spices like cardamom or ginger. We’ve had great fun exploring those flavour combinations in our own artisan creations.
Ruby Chocolate: Fruity, Floral, and Naturally Pink
Ruby chocolate is the new kid on the block. First introduced by Barry Callebaut in 2017, it’s made from a special variety of reddish-pink cocoa beans. No food colouring is added, its colour and berry-like tang come from a special fermentation process.
With its fruity notes and pink hue, ruby chocolate is an exciting choice for adventurous chocolate lovers and creative dessert makers alike. It’s already making its way into truffles, bars, and bonbons at artisan chocolate shops around the world.
Blonde Chocolate: The Caramelised Dream
If white chocolate decided to go on a golden holiday, it would come back as blonde chocolate. Also known as caramelised white chocolate, this indulgent variety is made by slowly heating white chocolate until the sugars caramelise, resulting in a toasty, rich flavour with notes of toffee and butterscotch.
Blonde chocolate has a gorgeous golden hue and a creamy texture. It's not as sweet as white chocolate, and not as bitter as dark; sitting right in the middle as a comforting, moreish treat. It’s growing in popularity, especially in the world of premium and artisan chocolate.
So, Which Type Is Your Favourite?
Whether you’re a dark chocolate devotee or a blonde chocolate convert, there’s a type of chocolate out there for every mood and moment. And when it comes from an artisan chocolate shop that cares about quality, ethics, and creativity (like we do at Harry Specters) you can taste the difference.
No matter which type you choose, make sure you check the ingredients. The best chocolate will always put cocoa (or cocoa butter) first, and avoid artificial additives or excessive fillers. It should melt on your tongue, not in disappointment.
The Wonderful World of Chocolates
The world of chocolate is rich and diverse, much like the flavours themselves. From milk chocolate classics to the deep notes of dark chocolate, the floral zing of ruby, or the buttery brilliance of blonde, each type offers a different kind of joy.
At Harry Specters, our award-winning chocolate is made using premium cocoa and fresh ingredients, ethically sourced and expertly crafted, of course. So the next time you’re indulging in your favourite bar or luxury selection box, take a moment to appreciate the craft, the cocoa, and the journey behind every bite.
